The food safety and defense graduate certificate program requires completion of 12 credit hours, including four courses from the list below:

- A Multidisciplinary Overview of Food Safety and Security
- Food Protection and Defense-Essential Concepts
- Food Toxicants
- Advanced Food Microbiology & Biotechnology
